Gulabjamun
My personal favourite and I guess most of us like to have them for sure. One of the most popular dessert in India. There are various types of gulab jamun and every variety has a distinct taste and appearance. I like my gulabjamun's too be mild sweet but very soft and without any filling. In northern India you find them with a little filling of pistachios or cardamom. I like them without all of these.
I have tried the recipe of Vahchef couple of times and every time they turn out perfect.
Ingredients
For making 10 Gulabjamuns
For gulabjamuns -
1 cup Milk powder
2 1/2 tsp Maida
2 1/2 tsp Rava/sooji
1/2 tsp Baking powder
2 tsp Fat like shoetening,ghee,dalda
For syrup-
2cup Water
2 cup Sugar
Syrup :-
Mix water and sugar in a boiler and boil them upto 1 string consistency. For julab jamun made with milk powder little thinner syrup is required. I used a already sweet milkpowder so used less sugar in the
syrup.Add few drops of lemon juice to it so that there are crystals formed.
You can add cardamom powder ,rose water or saffron whatever you want, to the syrup to give it a fragrance.
For Gulabjamuns
Soak sooji in warm water for 5 mins and keep it aside.Mix milk powder and ghee and crumble {Mix without adding any liquid} it.Then add maida, baking powder and soaked sooji {make sure you remove all the water from sooji and then add} to it.Crumble all the mix.Sprinkle just a little bit of milk and mix it.In cloth keep this dough for around 10 mins.
For smooth balls firstly press the ball and then make round. Make small size balls beacuse they will expand once they are fried and in the syrup.Heat oil {not very hot} Deep fry all the balls for atleast 7 mins on a slow flame
Now add balls to syrup.
